On Farm Dinners - Capture the Season

August 18, 2016

Chef Frank Pace, owner at The Great Northern, sets-up shop on location at Jericho Settler's Farm to host dinners around three times a year. The dinners range from high-ticket benefits to fun, affordable evenings like this Sunday's Pig Roast to celebrate Vermont Open Farm Week. Why put up with the hassle of hauling and setting up all your cooking equipment on the farm? "I have had a relationship with Mark and Christa [owners at Jericho Settlers] for many years. I love what they do - they raise small herds, and maintain them extremely well. And when you cook their products on the farm itself, it tastes better," Chef Pace shared.

For the farm, it's a way to showcase and celebrate their hard-earned harvest. The farm shared their excitement about the upcoming feast, "We love to partner with our Vermont chefs because their talent and skill can showcase our vegetables and meats in the most interesting and delicious ways. We have had the pleasure of working with Frank Pace for years, and we have always marveled at his ability to butcher and master the entire pig. We raise our pigs on pasture, with plenty of vegetable scraps, and only non-GMO grain. This Primal Feast is so special because it is the most wallet and budget friendly chef-to-farm dinner that we have been able to host, with the goal of including the entire community!"
