In 2006 The Skinny Pancake became the first vending cart ever to join the Vermont Fresh Network. Since joining the membership The Skinny Pancake has grown significantly. In June 2007, The Skinny Pancake opened a waterfront restaurant in the LEED Certified Lake & College building at the Main Street Landing complex on Lake Champlain. The Skinny Pancake continues to believe in the importance and potential of the double bottom line: financial viability and socially responsible business practices. They source as much of their food from the local economy as possible. Aside from sugar, salt, and vanilla extract, the basic crepe is a 100% local product. In addition to being Burlington's only creperie, The Skinny Pancake has recently become Burlington's only Fondue Parlor. The Church Street vending cart location continues to operate on nice days for lunch and dinner while The Pancake Tour Bus still makes stops at festivals and fairs throughout the Northeast during the summer & fall months.
