Just last year, Chef Kevin Lasko and his partner Katie Stiles moved from New York City to take over the Original General Store in Pittsfield, Vermont. Kevin and Katie run the General Store, Vermont Farms Catering and (since that wasn’t quite enough) in February they opened The Backroom, a cozy, seasonal dining experience open for reservations on Friday and Saturday nights. Central Vermont and its visitors are glad they took the leap--the 22-seat restaurant, which is in their lovely production kitchen, has been booked since they opened the space!
Chef Kevin was inspired by a ‘chef delivery’ service he participated in in NYC, where foodie fans could book their favorite 5-star chefs to cook pop-up dinners in their own home. The fun, comfortable dinner party atmosphere was exactly what Chef Kevin hoped to create with The Backroom. He offers an inspired, three-course menu preceded by cocktails and hors d'oeuvres and accompanied by an extensive beer, wine and cocktail list. The menu is completely seasonal, flexible to any dietary restrictions and the excitement Chef Kevin continues to find in his new farm partnerships is on display in each dish. Chef Kevin has found many challenges to his new life and career in Vermont, from the snow management to maintaining and caring for a 100 year old property, but the fact that he can go for a run to his favorite fiddlehead spot and feature his forage on that evening’s menu, make it all worth it!
